I started my career working at the “Caffè Giardino” in Meran (located near the Kurhaus), at that time administered by my family. Thanks to the knowledge of the maternal grandmother (baker), I learn slowly the homemade art of cooking and preparing sweets, at the same time I learning from the various gelatiers coming from the valley of Zoldo (Belluno) to do ice cream, sorbets, semifreddi and many others things. During the Winter seasons from 1974 to 1981, I work at the Palace Hotel in Meran as second Barman, collecting a great experience also in the hotel branch.
In January 1981 I was contacted by the first Michelin star Arge Alp Giancarlo Godio to organize a official dinner in the Hotel Gellert, for Agriculture, Commerce and Economy, in Budapest, treating the appearance of dessert, ice cream and semifreddi.IMG_9629
After marrying in 1979 with Alessandra, who still works with me, I started managing the family business until 1993. In 1992 I got my diploma as a craftsman. Since 1994 I have been working with my wife the pastry shop Mary Mary in San Michele Appiano. During these years, I specialize in chocolate and propose many crafts of praline, Easter and Christmas compositions.
Since 2003 I have been working with Gami as a demonstrator and consultant. I attend numerous fairs and Expo including IBA Munich, SIGEP Rimini, Düsseldorf Interpack, Cologne Pro Sweet, IBIE in Las Vegas and Dubai Gulfood.Home (3)
I was selected in 2007 among the best Italian pastry makers, who participated in the final of the Gran Prix of Confectionery with a performance in Berlin, qualifying me third in a traditional apple pie.
In 2009 I also participated in the competition, qualifying fifth.
In April 2012, we move to a new location, the “Chicco Allegro”, specializing mainly in the pastry and continuing my trade fair and coursework. I am organizing pastry, ice-cream and chocolate courses with clients all over the world: I recently attended a chocolate praline course for the Laateen Trading East company in Riyadh, Saudi Arabia, receiving a praise from the company.
